Description: Benedetto Cavalieri Penne Rigate (ridged) pasta is an artisanal pasta produced with a blend of the best durum wheat semolinas. Extruded through traditional bronze dies and gently pressed, which prevents the "mechanical destruction" of gluten and carbohydrates. Due to different shapes and thickness, each pasta format has a different drying period, which can vary from 24 to a total of 40 hours. As far as pasta-making quality is concerned, the lower the drying temperature, the higher the quality.
Benedetto Cavalieri started growing wheat in the region of Apulia in the South of Italy. The company was founded in 1918 and makes top quality artisanal pasta from locally grown durum wheat flour by manufacturing process called “delicate method” which involves long kneading, slow pressing, drawing and drying in a low temperature. Pasta shapes are made with bronze dies, which give a rough surface to the finished pasta allowing it to hold more sauce. The pasta has a flavour of quality durum wheat with natural chewy texture and high nutritional values of wheat retaining carbohydrates and proteins.

Cooking Instructions: Bring a pan of generously salted water to the boil. Once boiling, reduce to a medium simmer. Add pasta and cook for until al dente(cooking time indicated on packaging). Remove using a colander. Add the pasta to the pan with your chosen sauce. Carefully combine and add some pasta water if needed. Plate up and finish with your favourite grated cheese and a drizzle of BenVenuti E.V.O.O.
