Description: Our Sardinian coppa is made using the cut between the neck and the upper shoulder. Dry salted and then cured for a minimum of 60 days. The process gives the meat scent and fragrance and a soft, sweet and gentle taste.
Our Recommendation: It is generally consumed fresh in thin slices, but it is also delicious as a basic ingredient in the preparation of starters and main courses. It can be used as an ingredient in a variety of recipes, from Charcuterie board to starters, salads, sandwiches and snacks for aperitifs.
