Description: Benedetto Cavalieri "Paccheri" artisan pasta is a short durum wheat semolina pasta, with a shape similar to maccheroni, though slightly shorter. "Paccheri" means Slap, a name given due to the larger size shape than a classic Maccheroni. Benedetto Cavalieri pasta is one of Italy's greatest, produced with a rigorous selection of the best durum wheat semolinas cultivated without chemical fertilisers.

Paccheri pasta has a cooking time of sixteen minutes, as any connoisseur of good food knows, top quality pasta needs to cook for a long time. A simple rule of thumb to remember is the longer, the better the pasta quality, this Paccheri pasta after 16 minutes is firm to the bite.

Benedetto Cavalieri started growing wheat in the region of Apulia in the South of Italy. The company was founded in 1918 and makes top quality artisanal pasta from locally grown durum wheat flour by manufacturing process called “delicate method” which involves long kneading, slow pressing, drawing and drying in a low temperature. Pasta shapes are made with bronze dies, which give a rough surface to the finished pasta allowing it to hold more sauce. The pasta has a flavour of quality durum wheat with natural chewy texture and high nutritional values of wheat retaining carbohydrates and proteins.

Ingredients: Durum wheat semolina

Our Recommendation: One of the most iconic dish in the South of Italy with this lovely shape of pasta, is Paccheri Pasta with Calamari and Courgettes. Paccheri is great shape of pasta to mix with fish and molluscs, however Ben Venuti Tomato & Ricotta Forte sauce, is a great match!

Allergens: Gluten
